- 2 tsp. cornstarch

- 1/2 lime juiced

- 3 shallots (cut into wedges)
- 2 medium carrots (cut into half moons)
- 1/4 head green cabbage (thinly sliced)
- 1 1/2 cups sugar snap peas (halved)
- 4 serrano chilies (thinly sliced, optional)
- 3 cups cooked Jasmine rice (cold)
- 1/4 cup fresh cilantro (finely chopped)
- 1/4 cup fresh mint (finely chopped)
- 2 scallions (thinly sliced)
