Loved this recipe. Had to modify it as duck liver is not available in Costa Rica. I used chicken livers instead, while not as rich as duck it worked well. Using cognac in place of wine gave a bit more kick. Should have doubled the recipe as it disappeared quickly, even from those that do not like liver.
