- 2 Tbsp. oil
- 1 tsp. vanilla
- 2 1/4 cups flour
- 1 1/2 cups sugar (+ 2 Tablespoons Sugar)
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1 cup butter (softened, cut into cubes)
- 2 Cake (layer, or a three layer cake, the layers will be thinner. If you would like to make an extra large triple layer cake, 1½ times the recipe and use three 8 or 9 inch cake pans.)

This was very simple with just the right amount of ingredients. I have to make no adjustment except when I blend in the buttermilk. I added the buttermilk to the sugar and butter last and it was cold and caused the butter to solidify and become lumpy.
is better to blend them together or the buttermilk at room temp.
