- 1/2 tsp. guar gum (or xathan gum, I used guar gum, it's cheaper!)
- 1/2 tsp. lemon juice
- 1 pinch sea salt
- 1/2 tsp. vanilla extract
- 1 Tbsp. caster sugar
- corn flour (for dusting)
- toasted coconut (to serve)
