- 2 Tbsp. dried wood ear mushrooms (or 1/2 cup minced bamboo shoots, *Footnote 2)
- 1/2 rice vermicelli (pack dried, *Footnote 3)
- 2 cups cabbage (shredded)
- 225 grams firm tofu (crumbled by hand)
- 1 cup carrot (shredded, about 4 carrots)
- 4 cloves garlic (minced)
- 1 Tbsp. ginger (minced)
- 4 Tbsp. peanut oil (or vegetable oil, separated, and more to fry the dumplings)
- 3 Tbsp. soy sauce (separated)
- 1 Tbsp. Shaoxing wine (or dry sherry)
- 1 tsp. curry powder
- 1 tsp. maple syrup
- 1/2 cup green onions (finely chopped)
- 50 dumpling wrappers (packaged frozen, thawed OR homemade dumpling wrappers, *Footnote 4)
