- 25 lb. tomatoes (paste, or 30 pounds mixed tomatoes, cherry tomatoes are fine)
- 1 cup onions (finely chopped)
- 1 tsp. salt (optional)
- 1 clove garlic (minced)
- 1 tsp. black pepper
- 1/2 tsp. cayenne pepper
- 1 cup cane sugar (white or brown)
- 1 cup apple cider vinegar
- 12 oz. tomato paste (organic, no salt added)
- 3/8 cup water (5 tablespoons)
- 1/8 cup whey (or water)
- 2 Tbsp. apple cider vinegar
- 1/4 tsp. mustard powder
- 1/4 tsp. canela
- 1/8 tsp. cloves
- 1/8 tsp. allspice
- 1/8 tsp. cayenne
- 1/2 tsp. salt
- 1/3 cup maple syrup (or honey, You could even add a bit of molasses.)
