- 2 black cardamom pods (or red, split in half)
- 2 tsp. ground cumin (freshly)
- 3 Tbsp. Sichuan peppercorn (freshly ground)
- 3 Tbsp. porcini powder
- 5 tsp. Diamond Crystal Kosher Salt (; for table salt, use about half as much by volume or the same by weight)
- 1 tsp. msg (optional)
- 2 Tbsp. sugar
- 2 1/2 cups peanut oil (or any other neutral oil)
- 2 cups sliced shallots (thinly, about 1mm thick)
- 3/4 cup garlic (thinly sliced, about 1mm thick)
