- 1 Tbsp. sugar
- 1 1/4 cups warm water (110°F-115°F)
- 1 tsp. salt
- 1 Tbsp. butter (melted and cooled for dough)
- 3 3/4 cups flour (all purpose or bread flour - and up to 3/4 cup more if needed)
- 1/2 cup baking soda (for baking soda bath)
- 8 cups water (for baking soda bath)
- 1 tsp. coarse salt (for sprinkling)
- 1/3 cup salted butter (melted, for brushing on after baking)
- 1/2 cup plain greek yogurt (or mayonnaise)
- 2 Tbsp. yellow mustard
- 1 Tbsp. Dijon mustard (or to taste)
- 2 tsp. honey (or to taste)
- 1 tsp. lemon juice (or apple cider vinegar)
