- 1 pinch salt
- 6 sage leaves (fresh, chopped, depending on the size large leaves use 4 smaller 6)
- 2 1/2 cups all purpose flour
- 1 Tbsp. water
- 1/2 cup ricotta
- 1 egg (beaten)
- 1/2 cup toasted walnuts (chopped finely)
- 2 Tbsp. chopped parsley
- 1/4 cup Parmigiano Reggiano (grated)
- 1/4 tsp. lemon zest

- 1/4 cup white wine
