Used the instant pot for my second proofing also, 2 layers of 3 balls. The other two near the oven light. Should’ve worked 1 - 1 1/2 tablespoons more of flour after seeing from the first rise the dough was yet sticky. It’s been a while since I’ve worked with yeast dough — maybe five years.
They started to look more like naan by the third one out of the cast iron pan. Brushing water on was more sucessful/faster than dipping the fingers.
A few near the end had the garlic and butter.
I’d consider this easy my second time around.
