  • 2 cups shredded coconut (unsweetened finely)
  • 5 teaspoons cinnamon (the cinnamon is what makes this really yummy!)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1/2 cup sugar (choice, sucanat, coconut palm sugar, or brown sugar)
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/3 cup coconut oil (melted)
  • 4 egg whites (whisked to frothy**)
