- 10 cups rolled oats (divided)
- 2 cups sucanat
- 2 tsp. sea salt
- 4 1/2 cups rolled oats (ground in the blender to become flour*)
- 1 cup flour (whole grain, I used freshly ground wheat, but you can use rice, sorgham, or another gf option if you like.)
- 1/2 cup arrowroot powder
- 2 cups shredded coconut (unsweetened finely)
- 5 tsp. canela (the cinnamon is what makes this really yummy!)
- 1/2 tsp. salt
- 1 tsp. baking soda
- 2 tsp. vanilla
- 1/2 cup sugar (choice, sucanat, coconut palm sugar, or brown sugar)
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/3 cup coconut oil (melted)
- 4 egg whites (whisked to frothy**)
