It definitely was tender. I experimented by adding lard and had to then add more flour. It baked beautifully but the bottom didn't hold together well when served. No fault of the recipe. Had I had more shortening, I would guess this would have been a better balance of flakiness, tenderness with a better ability to support the filling when served.
