Splurge time! The decadent Parmesan cream sauce known as Alfredo turns even the simplest meal into a celebration, especially when you’re tossing it with fresh pasta. The trick to the perfect Alfredo sauce is to reserve a little pasta cooking water to add as needed so it comes out deliciously rich, but not too thick or cloying. For the silkiest sauce, use genuine Parmigiano Reggiano cheese and finely grate it yourself; the cheese will melt seamlessly into the sauce. The recipe, which makes 3 cups sauce (enough for 18 oz. fresh pasta), is a Yummly original created by Ivy Manning.
Ingredients
- 6 oz. Parmigiano-Reggiano cheese (a chunk, not pre-grated)
- 3 large garlic cloves
- 12 Tbsp. salted butter
- 2 cups whipping cream
- 2 bay leaves
- 1/2 tsp. salt (plus more to taste)
- 1/2 tsp. freshly ground black pepper (plus more to taste)
- hot water (about 1/2 cup hot salted water reserved from cooking pasta)
- cooked pasta (18 oz. fresh pasta cooked according to package directions)
Directions
- Finely grate Parmesan: Either cut it into chunks and whirl it in a food processor until finely grated, or use a Microplane or box grater; you’ll have about 2 1/3 cups. Set aside. Mince garlic.
- Melt butter in a 12-inch frying pan over medium-high heat. Add garlic, cream, and bay leaves and bring to a simmer. Reduce heat to low and cook, stirring frequently, until cream mixture is slightly reduced, 5-7 minutes.
- Add Parmesan, salt, and pepper to the cream sauce and stir constantly until cheese melts, about 1 minute. Discard bay leaves.
- Set aside about 1/2 cup hot pasta cooking water, then toss drained pasta with sauce. If sauce seems too thick, toss in about 1/4 cup cooking water at a time. (The sauce will continue to thicken as it stands.) Season to taste with more salt and pepper.
