I followed the recipe as is and it turned out great. We opened a can of cranberry to go with it. This is a keeper for leftover turkey dinner.

Delicious! I didn't feel like cooking one late afternoon in mid-September, but I had to make something for dinner and decided to try this. I had come across this recipe before and saved it in my "Yums." This casserole was so quick and easy, with very few ingredients, but it is so good. I used lower-sodium chicken stuffing mix and canned mixed vegetables. Instead of leftover turkey, I had very thickly sliced oven-roasted turkey breast on hand, so I stacked the slices and cut them into even-sized "chunks." The mayonnaise gives it a light flavor and texture, as opposed to a heavier cream soup that some recipes call for. I actually didn't notice that the shredded cheese was to go on top but tossed it in with the turkey and mayo by mistake. So, I sprinkled more shredded cheese on top and the paprika. Turned out really good. We will definitely have this again (soon)!
