- 1/4 cup unsweetened apple juice (or apple cider)
- 3 Tbsp. honey
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- freshly ground black pepper (to taste)
- 3 Honeycrisp apples (medium, about 1 pound, thinly sliced)
- 1/2 lemon
- 12 oz. salad greens (spring mix, baby spinach, arugula, baby romaine, or a combo of your favorites)
- 1 cup pecan halves (toasted or candied)
- 3/4 cup dried cranberries (or dried cherries)

third time I've made it and still love it. the hardest thing is convincing your friends to eat blue cheese but it really does push the meal over the top.

The salad was very good & everyone seemed to like it. I cut the honey to 1T and used toasted pecans to avoid some of the sugar in the recipe. It still seemed very sweet because of the apple juice(unsweetened) & the dried cranberries. It was a good mix of flavors.

We made this salad for our Christmas Meal of Prime Rib. It was the perfect flavor to compliment the meal. The only thing different we did was add a bit of Dijon Mustard to the dressing.

Let me first say I’m not a salad person. I had SECONDS of this salad. Absolutely delicious. I skipped the apple cider vinegar in the dressing (because I thought I had some and didn’t), and it turned out great! Maybe sweeter than some salad people may like, but I loved it. I also skipped the blue cheese because just not a fan of it. And I roasted the pecans because I didn’t want it to be TOO sweet with the candied pecans. VERY easy prep.

The dressing was too heavy on Apple Cider Vinegar, had to make some adjustments to balance it out. Instead of candied pecans (too much sugar for me) I used pistachios because I had them and feta is what I had on hand, instead of blue cheese. My husband does not like big pieces of apples (or any fruit) in his salads, so I diced them up into little pieces, so he doesn't really even notice it. The final product was delicious! Other than the origianal dressing being to tart for me, I have no doubt just following the recipe would be delicious too!
- Made it again: No apple Juice or cider on hand so I mixed in a little apple sauce, and still kept the Apple Cider Vinegar to a minimum., Delicious!

Great salad for lunch or dinner. It’s light and refreshing. I added some grilled chicken and substituted blue cheese for feta cheese. I also added red onions. The dressing didn’t taste right so I used Fiji apple salad dressing and it came out great!!!! I will make it again

Dee-lishis! I also added chicken and think the dressing needs a little work maybe a homemade strawberry vinaigrette instead. Added this one to the favorite salad recipes!

Followed as instructed, thought had too much olive oil in it. I did have some left over crispy chicken tenders and chopped those up to add more flavor and it tasted much better. Would not make it again.

Great salad to take to work and make as a side dish for dinner. It is great for those that tend to shy away from salad as it has a sweet taste to it. I used cranberry juice instead of apple juice, which was just as good as the original receipe.

Super tasty! It was a rather large portion for my table of 7 as a side dish (only three courses at my table) so I'll probably cut in half next time.
