- 18 whole dried chillies (15g, soaked in boiling water for 10 minutes, drained and roughly chopped)
- 4 shallots (banana, peeled and roughly chopped)
- 2 tsp. shrimp paste
- 70 grams palm sugar (or rock)
- salt
- 120 mL sunflower oil
- 600 grams prawns (whole raw, heads, tails and shells removed and reserved, deveined)
- 800 grams baby-back pork ribs (cut into 2-3 rib pieces)
- 350 grams egg noodles (cooked yellow, equivalent to 120g dried)
- 300 grams rice vermicelli (cooked, bee hoon, equivalent to 200g dried)
- 250 grams water spinach (kan kong, blanched for 1 minute, or broccolini)
- 180 grams beansprouts (blanched for 1 minute and refreshed)
- 6 eggs (boiled for 8 minutes, peeled and cut in half lengthways)
- 4 Tbsp. fried shallots (shop-bought; you can buy tubs in Asian food stores)
