- 1 bunch bok choy
- 6 cups fish stock (Chinese, see recipe)

- 1 Tbsp. ginger (julienned)
- 1 tsp. white sugar
- 200 grams fish fillets (firm white-fleshed, cut on the diagonal into 1cm slices)
- 60 grams oyster mushrooms (fresh, stems discarded and caps finely sliced)
- 2 tsp. sesame oil
- 1/2 cup spring onion (julienned)
- 1/4 cup coriander sprigs
