- 1 kg prawn (prawn heads and shells using 1kg fresh prawn)
- 80 grams anchovies (ikan bilis rinse and set aside , dried anchovies)
- 500 grams salt (pork bone rub, and marinate for 5 mins)
- 3 cloves garlic (sliced)
- 5 shallots (sliced)
- 1 inch ginger (sliced)
- 3 Tbsp. oil
- 2 liters water
- 1 Tbsp. white peppercorns
- 20 grams rock sugar
- 1 Tbsp. fish sauce
- 300 grams yellow noodles
- 150 grams bee hoon (thick)
- 60 grams bean sprouts (nip off the tail)
- 800 grams prawns (big, de-shell and de-vein)
- 3 squid (medium size, clean and slice into rings)
- 200 grams pork belly (pork belly rub salt and marinate for 5 mins. Rinse off the salt)
- 100 grams spring onion (cut into 4cm lengths)
- 3 eggs (lightly beaten)
- 2 cloves garlic (chopped)
- 2 Tbsp. fish sauce (/soy sauce)
- 4 limes (halved)
- chilli (sambal)
