- 1/2 tsp. dark soy sauce (may substitute 1/4 teaspoon low-sodium soy sauce plus 1/4 teaspoon molasses)
- 1 piece fresh ginger root
- 2 cloves garlic
- 4 leaves lacinato kale (or Tuscan)
- 2 scallions
- 2 Tbsp. cornstarch
- 1 Tbsp. peanut oil (or grapeseed oil)
- 1 Tbsp. Shaoxing rice wine (may substitute mirin or dry sherry)
- 1/2 cup low sodium vegetable broth (or chicken broth)
- 2 Tbsp. hoisin sauce
- 1 Tbsp. low sodium soy sauce
- 1/4 cup pomegranate juice
- 1/3 cup pomegranate seeds (fresh, for garnish, arils; optional)
