- 1 qt. chips (Hickory Wood, for grilling)
- 4 oz. veal demi glace
- 1 cup huckleberries (fresh when in season or frozen)
- 1 tsp. bitter chocolate
- 1/2 Tbsp. unsalted butter
- 2 cups port wine
- 1 cup mirepoix (medium dice of carrot, celery, onion, leek)
- 1/2 Tbsp. extra-virgin olive oil
- 1 1/2 lb. ground bison (burger)
- 1 1/2 tsp. kosher salt
- 2 Tbsp. chili powder
- 1 tsp. freshly ground black pepper
- 1/2 cup chopped cilantro
- 1/4 cup mild green chile (diced fire-roasted, canned or fresh, about 1 whole, see note)
- 2 tsp. minced garlic
- 1 tsp. lime zest (grated)
- 2 Tbsp. green onion (finely chopped)
- 1 chile (pickled jalapeño, finely chopped, optional)
- 1 avocado (peeled, seeded and thinly sliced)
- 4 slices jack cheese (optional)
- 2 tomatoes (ripe, sliced)
- 4 slices red onion
- 4 Italian rolls (sweet, – 6 inches long or Mexican bolillo rolls)
- 2 cups iceberg lettuce (shredded, or cabbage)
- 1/2 cup mayonnaise
- 2 Tbsp. lime juice (freshly squeeze)
- 2 tsp. lime zest (grated)
- 1 Tbsp. chile (finely chopped pickled jalapeño)
