- 1 onion (large, chopped fine)
- 2 carrots (medium, peeled & chopped medium)
- 2 stalks celery (chopped medium)
- 3 garlic cloves (medium, minced)
- 1 bay leaf
- 1 tsp. fresh thyme leaves (minced)
- 1 cup lentils (rinsed and picked over for small stones)
- 6 cups water (or low-sodium vegetable stock)
- salt (to taste)
- black pepper (to taste)
- 3 Tbsp. fresh parsley leaves (minced)
- 1/2 cup spaetzle (recipe follows)
- 1/2 cup 2% milk
- 1 tsp. salt
- 6 large eggs
- 1 1/2 cups white whole wheat flour
- 1 1/2 cups all-purpose flour
- 1 Tbsp. olive oil (or canola oil)
- 1/4 cup chopped fresh herbs (I used parsley, thyme, rosemary, sage, chives)
- salt (to taste)
- ground black pepper (freshly, to taste)
- pinches grated nutmeg
