  • 3 tablespoons olive oil
  • 2 tablespoons fresh herbs (assorted, chopped)
  • 1/2 teaspoon orange zest
  • 1 clove garlic (minced)
  • 2 bell peppers (seeded, quartered)
  • 6 scallions (trimmed)
  • 3 baby zucchini (halved lengthwise)
  • 6 baby pattypan squash (halved vertically)
  • 2 medium tomatoes (halved vertically)

    Directions

    1. Preheat grill.
    2. Whisk together orange juice, olive oil, herbs and orange zest. Add vegetables and toss to combine. Set aside to marinate for 15 mins.
    3. Remove vegetables from marinade and grill, brushing with marinade, for 5 mins, or until tender. Arrange on a serving platter and season.
