- 1 lb. baby bella mushrooms (sliced, or white)
- 1 cup chicken stock
- 1/2 cup white wine (I use Pinot Grigio)
- 1 clove garlic (minced)
- 1/4 cup Herbs de Provence
- 3 Tbsp. olive oil
- 1/2 cup heavy cream
- 1/4 cup grass-fed butter

Pork was tender and the timing was pretty good. However, without a little thickening, like cornstarch, the sauce was a bit too thin. also the Herb de Provence was a bit bland as a flavor. I added Maggi seasoning in addition to salt and pepper. Maybe using dry Sherry would give a little more zing! Overall I thought it was a really good dish.
