- 1 eggplant (large, about 1-1/4, peeled and cut into chunks)
- 1 onion (large, cut into chunks)
- 1/2 cup Hellmann's or Best Foods Mediterranean Roasted Garlic & Herb Flavored Mayonnaise (divided)
- 1 Tbsp. lemon juice
- 1/8 tsp. black pepper
- 1/8 tsp. salt

Directions
- Preheat oven to 400°.
- Toss eggplant and onions with 1/4 cup Hellmann's® or Best Foods® Mediterranean Roasted Garlic & Herb Flavored Mayonnaise and arrange in single layer on baking sheet*. Roast 45 minutes or until golden brown.
- Process roasted vegetables with remaining ingredients in food processor until smooth. Chill, if desired.
