- 2 cloves garlic (peeled)
- 1 red chili (small, seeds remove and coarsely chopped)
- 1 pinch granulated sugar
- 1 salt (scant teaspoon)
- 4 Tbsp. olive oil (from the sundried tomato jar)
- 1 puff pastry (9×9-inch sheet all-butter, thawed but still cold)
- 1 handful fresh basil leaves
- 4 oz. goat cheese
- 3 heirloom tomatoes (small, sliced about 1/4-inch thick and drained on paper towels)
- 1 handful cherry tomatoes (sliced in half and seeds removed)
- 1 Tbsp. fresh thyme leaves
- olive oil

Very delicious. Sundried tomato pesto was the best part. Thought the goat cheese was a little too sweet. Trying it w ricotta next time & there will definitely be a next time! Yum!

Absolutely amazing! I used the leftover pesto on crostini’s with fresh ricotta and it was a second hit!
