- 1 lb. boneless, skinless chicken thighs (cut into 3/4-inch chunks)
- 2 Tbsp. promise buttery spread
- 1 sweet onion
- 2 1/2 cups fat free reduced sodium chicken broth
- 1 1/2 lb. potatoes
- 3 carrots (large, cut into 1-inch chunks)
- 1/8 tsp. sprigs fresh rosemary, torn into pieces
- 1/8 tsp. salt

Directions
- Melt 1 tablespoon Promise® Buttery Spread in 12-inch nonstick skillet and brown chicken. Sprinkle with rosemary. Remove chicken from skillet and set aside.
- Melt remaining 1 tablespoon Spread in same skillet over medium heat and cook onion, stirring occasionally, 5 minutes or until tender. Add broth. Bring to a boil over high heat, scraping up brown bits from bottom of skillet. Reduce heat to medium-low. Stir in remaining ingredients. Cook covered, stirring occasionally, 10 minutes. Return chicken to skillet. Cook covered over low heat 15 minutes or until chicken is thoroughly cooked and potatoes are tender. Mash 2 potatoes and stir in to thicken sauce. Garnish, if desired, with chopped fresh parsley.

Made this for dinner tonight, it was well liked by the family. I followed the recipe exactly, except I used italian seasoning instead of rosemary (because it has rosemary in it). The one thing that I heard from the family is that they wished there was more. Next time I plan to double the portion sizes. The picture I show was before I mashed the potatoes to thicken up the broth.
