- 3 large garlic cloves (smashed)
- 1 onion (peeled and halved and studded with 2 cloves)
- 1 bay leaf
- 1 sprig thyme
- 1 Tbsp. olive oil
- sea salt
- 2 Tbsp. olive oil (plus extra for serving)
- 1 lb. butternut squash (more or less, peeled, seeds removed, flesh diced)
- 1 large onion (diced)
- 4 turnips (small, about 12 ounces, thickly peeled and cut into chunks)
- 1 Tbsp. sage (chopped, or 1 ½ teaspoons dried)
- 2 Tbsp. chopped parsley

- 1/2 tsp. dried oregano
- 1 pinch dried thyme
- 1/2 lb. savoy cabbage (chopped into squares)
- 1 1/2 cups whole wheat bread crumbs (fresh)

- 3 Tbsp. sage (finely chopped, or half as much dried)
