- 1 large yellow onion (chopped)
- 3 cloves garlic (chopped)
- 3 medium carrots (2 cups peeled and sliced)
- 1 rutabaga (small, 1 and 1/2 to 2 cups peeled and chopped into bite size pieces,, approximately 1 inch cubes -see notes*)
- 5 red potatoes (medium, about 5 – 6 cups peeled and chopped into bite size pieces,, approximately 1 inch cubes)
- 1/2 lb. sliced mushrooms (white or cremini)
- 1/2 Tbsp. bouillon (Better Than, Vegetarian No beef Soup Base, there is also an organic variety available but I have not tried it.)
- 3 Tbsp. tomato paste
- 2 Tbsp. fresh rosemary (finely chopped)
- 1/2 tsp. onion powder
- 1/2 tsp. granulated garlic
- 1/4 tsp. pepper
- 1/4 tsp. celery salt
- 1/2 cup beer
- 1/2 cup red wine
- 3 cups water
