- 1 cup diced yellow onion (about 1/2 medum onion)
- 1/2 cup carrot (diced, about 2 medium carrots)
- 1/4 cup diced celery (about 1 stalk)
- 4 cloves garlic (minced)
- 1 tsp. dried thyme
- 1/4 tsp. crushed red pepper flakes
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
- 15 oz. cannellini beans (drained, about 1 1/2 cups)
- 15 oz. kidney beans (drained, about 1 1/2 cups)
- 15 oz. butter beans (also known as lima beans, drained, about 1 1/2 cups)
- 2 cups low sodium vegetable broth
- 2 sprigs rosemary
- 1 bay leaf
- 1 bunch lacinato kale (also known as dinosaur kale or Tuscan kale, cut into 1-inch pieces, about 4 cups)

Added a ton of salt and pepper at end, but was using homemade chicken broth and I never add salt. 2 cups broth seems skimpy, but it ends up perfect. Will make again.

Easy to make. I didn’t have Lima or bitter beans; substituted a second can of cannellini eans and omitted salt. Delicious.

I had to do some bean substitutions (doubled the white beans, didnt have butter, and then used canned kidney) and halved the salt due to autoimmune issues. This was absolutely fantastic. I also doubled the recipe. Pairs well with a Viognier <3

Super easy to make and absolutely delicious. This is my families go to easy meal. We've substituted the beans (black or more white beans) and we've also tried it with chicken stock. Either which way it's delicious.
