- 2 Tbsp. olive oil
- 1 onion (medium, finely diced)
- 2 carrots (large, diced)
- 2 garlic cloves (finely chopped)
- 1 Tbsp. rosemary (chopped, or 1 tsp dried)
- 500 grams fresh mushrooms (such as chestnut, finely chopped)
- 1.2 liters vegetable stock (from a cube is fine)
- 5 Tbsp. dry sherry (or marsala)
- 2 Tbsp. tomato (purée)
- 100 grams pearl barley
- Parmesan (grated fresh, to serve, optional)

Rich and “meaty” with mushrooms. Used a variety of dried and fresh baby bellas, and Marsala. Recipe is ripe for variations.

So yummy!!! Didn't use as much liquid as it suggested. Stayed quite liquidy and I used Freekah instead of barely. Very delicious.
Just made this a second time with equal success. Some notes I should mention. The Freekah I used was pre-cooked so it didn't soak up the liquid. I also added a few small
Potatoes this time. The mushrooms I used were all fresh, shiitake and chestnut. Liquid and seasoned to taste. Also used dry sherry and s little honey mead!
