- 2 Tbsp. olive oil
- 1 onion (medium, diced)
- 3 cloves garlic (minced)
- 8 oz. baby bella mushrooms (sliced, white mushrooms would work fine too)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. fresh thyme (or 1 tsp dried)
- 2 tsp. fresh rosemary (minced or ½ tsp dried)
- 1/4 cup dry sherry
- 4 cups chicken stock
- 2 cups water
- 2 cups butternut squash (cubed, I bought mine pre-cut but you could also peel and cube your own)
- 1 cup chicken (shredded, I used rotisserie chicken meat)
- 1 cup pasta (short cut, I used quinoa macaroni noodles)
- 2 cups kale (stemmed and roughly chopped)
- 1 cup heavy cream
- salt
- pepper
