My husband and oldest son loved these enchiladas. They taste like a lighter version of restaurant fare.

Fairly simple meal, though the prep took me longer than suggested. Good flavour. Would make again.

Turned out great! I made them exactly as directed, except I added a pack of enchilada seasoning to my meat. Gave a pan to my friend and they loved them too! will definitely make them again.

Very good. I substituted with black beans. Next time I will add basmati rice and also garnish with avocado.

Delicious!!! I halved the recipe since its only my husband and I and added mushrooms and bell pepper to the filling. My 23 year old son who is learning to cook even asked for the recipe. Definitely going into my book of most used recipes.
