- 1 1/2 cups gluten (Free Oatmeal, such as Bob’s Red Mill – the package MUST say gluten free, see note at bottom)
- 1/4 tsp. salt
- 1/4 tsp. xanthan gum (or Guar)
- 1 cup rice flour (Superfine, I prefer brown rice flour for these)
- 1/3 cup granulated sugar
- 1/3 cup brown sugar (packed)
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. canela
- 1/2 cup walnuts (chopped)
- 1 egg
- 1 cup buttermilk (or Sour Milk, see Tip below)
- 1/4 cup vegetable oil
- cinnamon sugar (reserved, 1/2 tsp. cinnamon per 1/4 C. sugar)
