- 1 1/2 cups crimini mushrooms (fresh, sliced)
- 1/2 cup brown rice (uncooked)
- 1 can chickpeas (drained and rinsed, or 1 ½ cups cooked chickpeas)
- 4 Tbsp. tomato paste
- 8 cups water (or low sodium vegetable broth, plus more for sautéing vegetables)
- 2 cubes bouillon (optional)
- 2 Tbsp. low sodium soy sauce (optional)
- 1 handful fresh spinach (roughly chopped, to serve**)

- 1/2 tsp. dried rosemary (or 1 tsp fresh)
