Description
This is a hearty, traditional chicken noodle soup. Since batch size is large, you may need to split the recipe between two dutch ovens. I recommend cooking everything until the, and adding to what you are immediately serving. That will preserve the freshness of the noodles.

- 4 bone-in chicken breasts
- 1 lb. carrots (chopped)
- 2 celery hearts (chopped)
- 1 yellow onion (chopped)
- 1 head bok choy (chopped)
- 12 cups chicken broth (fat-free reduced salt)
- fresh thyme
- fresh sage
- fresh rosemary
- fresh oregano
- 1 Tbsp. chopped garlic
- 2 Tbsp. olive oil
- 32 oz. gemelli pasta

Directions
- Preheat oven to 425 deg F.
- Season chicken breasts and bake in oven for 1 hour or until breasts are cooked through.
- Add olive oil to Dutch oven. Sautée garlic for 2 minutes over medium high heat.
