This was so easy to make! It was delicious! Did not change anything in the recipe, except for extra garlic, because hubby and I both love garlic. Otherwise, the recipe is great, as is!

These were great in the cast iron skillet, covered to help melt. Used half vegan cheese and half sharp cheddar, about 3/4 packet taco seasoning, 1 tbsp tube cilantro to taste, and omitted the corn. This is also one of those recipes can riff off of and do other fillings. Salsa, guacamole, sour cream/Greek yog, avocado, lettuce, hot sauce, etc when serving.

It's the best way to consume any leftover beans we have. I serve with some avocado and it's a complete meal in 10 minutes!

I make these all the time! I like to double the recipe and keep them in the freezer for a quick meal. They are so delicious.

I was amazed how good this was. I plan to make it frequently. It really pairs well with some sour cream.

It turned out great! I added a few things, like turmeric, hot paprika, red bell pepper, and used fajita spices instead. But gorgeously yummy.

Really quick and tasty. Didn’t add cilantro because it wasn’t on hand, but I threw in 1/2 cup kale that I had laying around in my fridge. Recipe made 5 large quesadillas.

So delicious and so easy. Perfect for when you don’t have any meat defrosted too! Garnished with pico, extra cilantro, avocado and sour cream.

Very tasty! I used vegan cheddar cheese instead of dairy cheese and it still tasted really great. I also added some mild taco sauce from taco Bell I had stored in my fridge

These were so flavorful! I used half cheddar cheese and half pepperjack cheese. Served them up with some salsa. Delicious!! I will definitely be making these again.

The quesadillas were delicious! I added more shredded cheddar, and garnished with fresh cilantro, fat free sour cream, and a lime wedge. Served with blue corn tortilla chips.

Super yummy. My husband is not a big fan when we dont have meat with dinner, but he loved these. They were so flavourful and quick to make - much better than other quesadillas we've made.

So delicious! I thought it would be too much seasoning, but it was great. I’m making them again right now with quesadilla cheese instead of cheddar like I used last time. And this time I’m not adding onion in the hopes that my husband will eat them. I’m still chopping some onion to add to mine! Oh, and I didn’t use cilantro

These were so good! I added sautéed shredded chicken breast to the recipe. They became the best chicken quesadillas ever! This recipe is most definitely a keeper !

Good. Added Feta Cheese to it as well. Maybe cut down to a half packet of taco seasoning. Did not add onion.
