- 2 eggs
- 250 grams flour
- 400 mL milk
- 1 pinch salt
- 1 Tbsp. sugar
- butter (or ghee for frying)
- maple syrup (for serving)
- raspberries (for garnish, optional)

Directions
- 1. Separate the eggs yolks and egg whites. Leave the egg whites in a cool place. Mix the yolks with the flour and milk to a smooth dough. Let rise for about 10 minutes.
- 2. Mix the cooled egg whites with a pinch of salt and sugar, beat until you get a stiff and shiny meringue and mix with the dough into 4 portions.
- 3. Heat the clarified butter in a pan, make heart shapes and pour the 4 portions in the batter. When the bottom is light brown fried, remove the heart shape, turn the pancakes and cook over low heat to an end. Continue until all the mixture is used up.
- 4. Transfer the pancakes on plates, pour maple syrup to taste and serve garnished with fresh raspberries.
