- 1 zucchini (medium, about 1 cup, shredded)
- 1/2 cup unsweetened applesauce
- 1 egg (OR 1 flaxegg)
- 2 tsp. vanilla
- 1 1/2 cups whole wheat flour
- 1 cup old-fashioned oats
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ground ginger
- salt (*optional)
- 1/2 cup unsweetened shredded coconut (toasted adds more flavour!)
- 1/2 cup chopped walnuts (toasted adds more flavour!)
- 1/2 cup dried fruit (chopped, I used strawberries and pineapples.)
- 2 Tbsp. sunflower seeds
