Description
These light yet hearty pancakes with a nutty crunch will start your family’s day off right. White whole-wheat flour and ground flaxseeds (look for them in your market’s baking aisle) make them extra nutritious. You can even make the pancakes ahead of time — the recipe makes 16 — to enjoy during the week on busy mornings. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 6 bananas (ripe, with some brown spots, divided)
- 2 cups milk
- 1/2 cup salted butter (melted)
- 2 large eggs
- 1/4 cup maple syrup (plus more for serving)
- 2 tsp. vanilla extract
- 2 cups white whole wheat flour
- 1/4 cup ground flaxseeds
- 2 Tbsp. baking powder
- 2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 2 pinches salt
- 1 cup chopped walnuts
- cooking oil spray (or a little vegetable oil)

Directions
- Peel 4 bananas. Mash bananas with a fork in a measuring cup (you should have 1 cup).
- In a medium bowl, stir together mashed bananas, the milk, butter, eggs, 1/4 cup maple syrup, and the vanilla extract. Set aside.
- In a large bowl, whisk together flour, flaxseeds, baking powder, cinnamon, nutmeg, salt, and walnuts. Add banana mixture to flour mixture, stirring until combined.
- Heat a large nonstick skillet or griddle over medium heat until hot. Coat with cooking oil spray. Scoop batter by heaping 1/3 cupfuls into hot skillet, and spread gently with a spatula to an even thickness. Cook pancakes in batches, 1 to 1 1/2 minutes on each side. Flip when the first side has bubbles around the edges and the underside is golden brown (gently lift the sides to check) and then cook until the second side is golden brown on the underside.
- Set pancakes on plates. Slice remaining 2 bananas and scatter over pancakes. Top with maple syrup. Refrigerate any leftover pancakes in a zip-top bag with parchment paper between them up to 2 days. To reheat, wrap pancakes in a damp paper towel and zap in the microwave for 15 to 30 seconds.
