- 2 cloves minced garlic

- 12 oz. frozen chopped spinach (thawed and squeezed dry**)
- 4 oz. cream cheese (may use 2 oz cream cheese + 2 oz greek yogurt, softened)
- 1/2 cup feta cheese (crumbled + more for serving)
- 1/4 cup fresh parsley (chopped, or 1 tablespoon dried)
- 1/4 cup fresh dill (chopped, or 1 tablespoon dried)
- 1 tsp. crushed red pepper flakes (or to your taste)
- 1/3 cup Kalamata olives (pitted + halved)
- 3 Tbsp. sun-dried tomatoes (or sun-dried tomato paste)
- 6 oz. havarti cheese (shredded)
- 1 Tbsp. fresh thyme (chopped)
- 12 sheets phyllo dough (thawed)
- 2 tsp. melted butter (or olive oil)
