I substituted the spelt flour for organic all-purpose flour (because it's what I had in the pantry) and added cardamom (less nutmeg) and 2 tablespoons of unsweetened cocoa powder. These cookies turned out amazing! They were just the right chewy texture. I will make this recipe every time I am craving molasses cookies :)
