Description
Gently sweet and sour and seasoned with fresh ginger, garlic, and toasted sesame oil, this chicken stir-fry is just as flavorful but far lighter than versions at Chinese restaurants. Green beans and bell peppers add color and crunch, but broccoli or bok choy would be delicious too. A Microplane is the perfect tool to finely grate the ginger and leave any fibers behind. The recipe is a Yummly original created by Danielle Centoni.

- 1 1/2 lb. boneless skinless chicken breasts (cut into 3/4-inch pieces)
- 4 1/2 Tbsp. reduced sodium soy sauce (divided; or use regular soy sauce and omit the salt in the recipe)
- 3 1/2 Tbsp. rice vinegar (divided)
- 1 1/2 Tbsp. toasted sesame oil (divided)
- 1/4 cup light brown sugar (packed)
- 1/4 cup chicken broth
- 2 Tbsp. dry sherry
- 1 Tbsp. cornstarch
- 2 tsp. fresh ginger (grated, peeled)
- 1 tsp. chili garlic sauce (or use ⅛ tsp. cayenne)
- 2 cloves garlic (minced)
- 2 red bell peppers (or 1 each red and yellow pepper, quartered lengthwise and cut crosswise into strips)
- 1/2 lb. green beans (cut into 2-inch lengths)
- 2 scallions (cut into 1-inch lengths)
- 3 Tbsp. vegetable oil (divided, or more if needed)
- 1/2 tsp. salt (optional, or to taste)
- 1/4 tsp. freshly ground black pepper (or to taste)
- 2 Tbsp. toasted sesame seeds
- steamed rice (or cooked noodles, for serving)

Directions
- In a large bowl, toss together chicken, 1/2 Tbsp. soy sauce, 1/2 Tbsp. rice vinegar, and 1/2 Tbsp. sesame oil until well coated. Set chicken aside to marinate while you prep the rest of the ingredients.
- In a medium bowl, combine brown sugar, chicken broth, and remaining 1/4 cup soy sauce, 3 Tbsp. rice vinegar, and 1 Tbsp. sesame oil. Add the sherry, cornstarch, ginger, chili garlic sauce, and garlic. Set sauce aside.
- Quarter bell peppers lengthwise and then cut crosswise into 1/2-inch-wide strips. Trim ends from green beans and cut into 2-inch lengths. Cut scallions into 1-inch lengths.
