  • 3/4 cup honey (or maple syrup*)
  • 1 tablespoon pumpkin pie spice
  • 1 1/2 tablespoons baking powder (aluminum free)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup oat flour

    THIS. WAS. FANTASTIC! It was sooo good! It was moist and not overly sweet! I used canola oil instead of the avocado or olive oil and it worked great. I also used 1 3/4 cups of pumpkin puree (which is almost exactly 15oz) because I had a can that was more than 15oz in the house. I was able to cut 16 good slices. I offered some to my brother and he basically inhaled 3 slices! This was fantastic, just like your Healthy Pumpkin Oatmeal Cookies (also on Yummly). I will DEFINATLY be making this again!
