I used red pepper flakes, garlic, ginger, and added lime and black pepper at end. I ain’t lying- never thought about using the infused oil. I added some of the fried garlic ginger at the end. Wow- should be next to those nasty sweet potatoes with marshmallows at Thanksgiving. Savory vs. Sweet and healthy? no contest!

This was delicious! I avoid eating garlic, so I fried a small onion in the ginger and pepper infused oil, fried on med for 10 mins, turned heat to low, added a spice mix of 1/4 tsp Garam masala, 1/4 tsp salt, 1/8 tsp pepper, 1/8 tsp cayenne pepper, 1/4 tsp curry powder, 1/4 tsp turmeric, 1/4 tsp all spice and a 1/8 cup brown sugar, then heated til fragrant and mixed into mashed sweet potatoes. Probably decreases the super healthy potential of the dish, however I have an Inflamatory reaction to garlic and wanted a kick of flavour.
