Turned out great! Didn’t have chicken stock so used a little water and chicken bouillon cube. My new favorite way to eat carrots!☺️

These are fantastic! I was a bit curious how they would turn out, but I'm very surprised! I followed the recipe pretty close, but didn't quite have a full two pounds of carrots so I added a bit of sweet potato. I mashed them a little more chunky and added a bit of salt...it tastes just like creamy mashed potatoes with a bit of butter!
Definitely will make this again!
