I don't eat meat, but my partner couldn't finished what I made her so I ate some - this recipe was so delicious!!
I had to get in on this action for my vegetarian self, so I've substituted the chicken with lentils, and I've been known to use a little coconut cream instead of coconut milk (which doesn't go down well with me). It's now one of my go-to slow cooker, meal prep, freezer-friendly meals. Absolutely astonishing recipe, will always be a favourite.

all our 3 kids love this - its great to double and cook in slow cooker- leftovers perfect to freeze for lunches or another dinner - i do add about a tablespoon of brown sugar and some smoked paprika
