- 15 oz. garbanzo beans (drained and rinsed)
- 1/2 cup water
- 1 Tbsp. olive oil
- 1 tsp. ground cumin
- 2 1/4 tsp. ground coriander
- 1 tsp. ground paprika
- chili powder (sprinkling of ground chipotle, to taste)
- 1/2 tsp. salt
- 2 garlic cloves (minced)
- 3 sweet peppers (small, minced)
- 10 soft corn tortillas (small, or tortillas of choice!)
- 1/2 yellow onion (diced small)
- 3 handfuls spinach (or lettuce, chiffonaded, that means "into strips" in fancy pants language)
- 1/2 cup salsa (your favorite)
- 1/2 cup vegan cheese (shredded)
- lime juice (optional)
- cilantro (optional)
