All 5 of us loved it! Which doesn’t happen often. I doubled the recipe and it filled 2 pans, so guess I’m not cooking tonight cause if you double it, it makes so much and it’s filling. I used gluten free sauce (no one knew!) and a bag of cheese on each pan (4 Mexican cheese mix) My young adult kids wanted to know what was in it but I didn’t say, so there was no pre judging on the veggies. Bought corn tortillas, so they broke up kinda, but it did not matter. I forgot to heat them up before I rolled them. Used the Mini chopper for almost all the veggies. Try it!
