- 4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
- 1 1/2 cups nuts (and/or seeds, I used 1 cup pecans and ½ cup pepitas)
- 1 tsp. fine grain sea salt (if you’re using standard table salt, scale back to ¾ teaspoon)
- 1/2 tsp. ground cinnamon
- 1/2 cup coconut oil (melted, or olive oil)
- 1/2 cup maple syrup (or honey)
- 1 tsp. vanilla extract
- 2/3 cup dried fruit (chopped if large, I used dried cranberries)
- 1/2 cup chocolate chips (or coconut flakes*, optional)

It turned out really well. The oats are crunchy. I just add whatever nuts and dried fruit I have in the pantry. It is slightly burnt but that is my fault. I’ll reduce the time to 20 min only in the future.

2019-11-13. Excellent granola, used olive oil. Added coconut half way through cooking, almonds, walnuts and pepitas. Not too sweet.
