- vegetable broth (or for non-vegetarian use bone broth or chicken broth)
- 1 Tbsp. extra-virgin olive oil
- 1 cup yellow onion (chopped)
- 1 cup carrots (chopped)
- 1 cup celery (chopped)
- 2 garlic cloves (minced)
- 3 cups potatoes (golden Yukon, diced into cubes)
- 4 cups Swiss chard (chopped including stems, can use rainbow chard)
- 4 cups vegetable broth
- 13 oz. coconut milk
- 1 Tbsp. Italian seasoning
- 1 bay leaf
- 1/2 tsp. salt (or to taste for less sodium)
- 1/2 tsp. black pepper

Definitely a comfort food. So interesting that this has coconut milk in it. Great flavor and very easy to make.
